Ricotta Cheese: U Can Make It

“It tastes just like the stuff you buy at the store.”

1 cup Whole Milk
1 tsp lemon juice

In a small pot, mix milk and lemon juice together on medium high heat.  Continue to stir to keep the mixture from scalding.  Bring to a boil.  When the mixture starts to separate, remove from heat.  Let sit undisturbed for 4 hours.  Strain with a tea strainer or flour sifter, or  a paper towel.  Makes 1/8 cup.
